
03 Sep La Bahia Seafood Truck Joins Columbia Gardens Food Truck Plaza
Kennewick, Wash. – Francisco Mendoza, chef and owner of La Bahia, Columbia Gardens Artisan Village’s newest Food Truck Plaza vendor, invites the community to help celebrate their grand opening on Friday, September 12, at 11 a.m. The ribbon-cutting event will include complimentary grilled items and Columbia Gardens mementos.
La Bahia, located at 325 E. Columbia Gardens Way in Kennewick, plans to operate seven days a week: Saturdays, Sundays, Mondays, Tuesdays and Thursdays from 10 a.m. to 10 p.m. and on Wednesdays and Fridays, from 10 a.m. until 2 p.m.
La Bahia in Spanish translates to The Bay, so seafood is a major component of many traditional recipes from Chef Mendoza’s hometown of Caleta, near Michoacán, Mexico. While La Bahia’s menu emphasizes seafood, there are many non-seafood options. Some of the unique offerings include shrimp tortas, fish or shrimp ceviche with octopus and the La Bahia Burrito filled with steak and shrimp. La Bahia also features signature and house-made salsas, and catering services from a separate, customized event trailer.
Chef Mendoza started cooking at an early age. His mother owned a restaurant in Mexico, and some of her original recipes are also part of the menu, as well as his mother-in-law’s signature Mexican-style rice.
Columbia Gardens’ Food Truck Plaza is also home to Bobablastic Tri-Cities, Botanas Culichi, Frida’s Mexican Grill and Nana’s Kitchen. Swampy’s BBQ restaurant is also located at Columbia Gardens.
Award-winning wineries, Bartholomew, Monarcha/Palencia and Gordon Estate, flank the food trucks. And that waterfront location is home to public art installations, with views of the Cable Bridge and diverse wildlife at the nature pond.
